Unless, as you say, you find a builder here who runs the same software you do. macOS contains all the necessary tweaks and accommodations for their own hardware, but sometimes it takes developers a while to catch up. I think I would check the support sites for the software packages you mention to see if they limit compatibility. There are now 10-series Intel CPUs in the official Apple line-up so macOS isn't the problem. It must be the best-supported hack' there is. The Z390 Designare thread is run by a real expert and you can see how much work has been done. They rarely change anything to avoid problems.
